Hello Blogosphere! I’m Candis and I work in Guest Services at Oceanfront Suites at Cowichan Bay. One of my interests is cooking and there is no shortage of wonderful fresh, locally grown ingredients in Cowichan Bay. Every suite in the hotel features a kitchenette full of cooking tools to help you whip up many different recipes. I often hear about what wonderful dishes guests have prepared while staying with us, so I thought I’d share some of my favorites with you.
Today’s recipe features a broiled salmon and is super easy to make. It’s a healthy meal to serve to your family and is a tasty accompaniment to a fresh salad. You could use snapper, haddock, or trout as an alternative to salmon.
Balsamic Vinegar Broiled Salmon Fillets
Serves: 4, Preparation Time : 15 Minutes
Ingredients
4 Fresh Salmon Fillets
1/4 Cup Balsamic Vinegar
2 Tablespoon Olive Oil
Freshly Ground Black Pepper
3 Tablespoon Chopped Fresh Mint
Directions
Heat broiler and place fish skin side down on broiler pan. Combine vinegar and olive oil and brush on fish. Sprinkle evenly with freshly ground black pepper.
Broil about 6 inches from heat for 7 minutes or until fish just flakes when tested with a fork.
Sprinkle immediately with mint and season to taste with salt.
Wine Suggestion: Vigneti Zanatta Pinot Nero or Pinot Grigio
